New and upgraded hotel restaurants are attracting the 20- and 30-something crowd to the area.

When The Breakers Palm Beach transformed formal French restaurant L'Escalier into HMF, a 1960s-themed small plates and sushi lounge, the resort's lobby became an instant hot spot. Then, this season, The Breakers gave an update to its Flagler Steakhouse—and a spate of other Palm Beach County hotels have followed suit, modernizing their signature dining rooms to attract a younger crowd.

Gone is the hotel’s buttoned-up American restaurant. In its place we find a modern Italian concept with dishes like a warm buratta with marinated tomatoes, prosciutto broth, and basil, a branzino crudo, and Angus short ribs. A sleek restaurant focusing on organic, sustainable, and local ingredients is breathing new life into the 27th floor of the hotel’s pink tower. Members and guests can curl up on white leather banquettes, or grab a seat at the bar and gaze over the Intracoastal and Atlantic.
