FOGO DE CHÃO, the famous chain of Brazilian churrascarias (steakhouses), gives new meaning to the term “portion control.” During lunch and dinner, guests are offered unlimited servings of 15 sumptuous cuts of fire-roasted meats (think filet mignon, prime rib eye and bacon-wrapped chicken). The pace of delivery is controlled with a two-sided colored disk: Green signals the servers to stop by and slice off skewers, while red indicates you’ve had enough.
