SCOTT UEHLEIN: Moderation, not deprivation. Diets are generally unsustainable in the long run, so we encourage you to eat in a more natural manner and be aware of what you’re eating.

What dishes epitomize this ideal at Canyon Ranch Grill?

The poached egg “Benedict,” atop our crab cake with Creole sauce (right), is low-calorie, protein-rich and delicious. Our Chilean sea bass with pineapple- Thai chili broth over roasted sweet potatoes, too: The fish is high in omega-3 fatty acids, the pineapple in vitamin C and antioxidants, and the sweet potatoes in vitamin A, potassium and beta-carotene.

What’s a surefire way to spice up a seemingly boring dish?

You’ll find that if you buy at the peak of freshness, fruits and vegetables already have a natural sweetness to them. And adding a splash of lemon juice for acidity and a pinch of sea salt can really make a simple, great-tasting meal.
