Forget five-star dining: The burger is back, with a slew of comfort-food-themed spots opening this winter by seasoned local restaurateurs. CP Burger, owned by Samantha and Craig Cordts-Pearce; 520 Grill, the latest fromchefs Troy Selby and Wheaton Augur; and Aspen’s oldest bar, the Red Onion, which makes its return thanks to Tom Colosi and his sister Jennifer.
