Did you know that sake is seasonal? Zuma does. The sushi haunt is now serving Denshin Aki, a rare sake blend of pear, banana, and nut that’s only available in the fall months. To boot, Zuma is the only Florida restaurant where Denshin Aki is poured.
The hyper-seasonal sake’s exclusive autumn availability is a Japanese tradition: "Our eating patterns and philosophies are based upon these annual changes. Fall represents true focus on cuisine and the encouragement of fine dining experiences,” says Zuma sake sommelier Sayoko Ieto. Denshin Aki is classified as a hiyaoroshi sake, or one that’s only pasteurized once before being stored to mature. Hiyaoroshi sakes have bolder flavor notes and elevated acidity.
