Hugo & Victor Brings Parisian Pastries to The Webster

Serving pastries, lunch, afternoon tea, cocktails, and weekend brunch, Hugo & Victor recently opened at The Webster.
Miami is full of sweets shops, but surprisingly lacking in the classic French patisserie department. Thanks to a chance encounter with The Webster's Laure Heriard Dubreuil, decorated French chef Hugues Pouget has opened an outpost of his Parisian patisserie, Hugo & Victor, inside The Webster.
“[Laure] loved our work, and I knew of The Webster,” Pouget says. “In Paris we are very close with the fashion world—we work with Dior, Chanel, Chloé, Viktor & Rolf—and we create pastries for them. It’s almost logic to work with The Webster because [the fashion world] is our universe in Paris.”

Having done stints at Ladurée, Le Bristol, and Restaurant Guy Savoy, the three Michelin-star chef was attracted to Miami for its international appeal, Art Basel buzz, and fashionable Design District.
“There are a lot of French people in Miami, so it’s like a small French town,” says Pouget. “It’s an original destination, but it’s interesting. Today in Miami there is no one like Ladurée, La Maison du Chocolat, Pierre Hermé; we are the first ones. So it was interesting for us to open here before everybody.”
But what sets Hugo & Vitctor apart from Ladurée, which will open soon on Lincoln Road, is its café-like setting and artful aesthetic. Near too pretty to eat pastries are displayed in dessert cabinets, like little objets d' art in a museum. Even sweeter is the fact that Pouget sources local, seasonal ingredients.

His current tropical winter menu includes a strawberry tart and lemon cheesecake, but a Key lime tart and Key Lime macaron are available year-round.
