The Palms Hotel & Spa restaurant, Essensia, subscribes dutifully to the holy trinity of farm-to-table cooking—local, seasonal, sustainable—and its dessert menu is no exception. The eco-friendly restaurant recently rolled out a number of new seasonal sweets flaunting fruits and vegetables at their prime. A PB&J upgrades your nostalgia for the lunchbox standard with creamy peanut butter mousse, strawberry filling, and candied peanuts, while the caramel-infused chocolate panna cotta packs salted caramel nuggets, a coffee base, and airy citrus foam. For a more vegetal ending to your meal, try the olive oil financier cake with heirloom tomato preserve (ABOVE).
