Written by Gabe Ulla and exclusive photography by Oliver Pilcher with lighting by Adam Klimaszewski, the recently released CARBONE, Assouline’s latest coffee-table book, captures the passion and vision of its founders—Jeff Zalaznick, Mario Carbone and Rich Torrisi—who set out to honor tradition while breaking culinary norms.
