Since Major Food Group’s expansion into Miami, the luxury hospitality brand has continuously brought unparalleled dishes and culinary hot spots to the Magic City. Now, the trio, which is composed of chef Mario Carbone, chef Rich Torrisi and Jeff Zalaznick, is introducing yet another venture to Miami’s culinary scene, CARBONE VINO.
The second location—the first being in Dallas—Miami’s VINO will offer MFG’s unique touch combining theatrics with expertly crafted dishes for discerning diners. “There’s an element of entertainment that’s really part of the DNA of our restaurants; that’s our goal,” says Carbone, chef and co-founder of MFG. “We want it to be much more than your meal; it’s a night out.”
Over the past four years, MFG has established itself across various neighborhoods in the city, each restaurant bringing a unique flavor to Miami’s vibrant culinary scene. “It’s been super rewarding,” Carbone says. “I couldn’t have imagined, in just a few short years, that we would have the presence that we do here.”
The decision to bring VINO to Coconut Grove was inspired by the prime location that became accessible nearly two years ago.

“When we started to look at the neighborhood, we thought, ‘This is the perfect place for VINO,’” he shares. “This neighborhood has a unique energy, and we wanted VINO to feel like a natural part of it. Every detail was customized and tailored specifically for the Grove, and I’m excited to see it come to life in this community.”
As the name suggests, VINO has a wine-driven menu and an acclimated beverage program featuring an inventory of 3,000 bottles and over 600 selections from wine regions around the globe. Guests can enjoy an extensive and ever-changing wines-by-the-glass list, which are usually only available by the bottle. With nearly 100 examples of bottles aged from five to 25 years, VINO’s sommeliers create an inviting and sophisticated environment to pair with your meal.

Celebrating the beauty and craftsmanship of Italian heritage, the menu features a small chapter from the Carbone cookbook, including the spicy rigatoni vodka and Caesar alla ZZ, as well as some exciting innovations that blend traditional Italian dishes with a contemporary twist that reflect Major Food Group’s evolving nature.
Carefully curated from his extensive culinary experience, Carbone notes certain menu items are nearly 10 years in the making.
Some standout items include the zuppa di mussels, a traditional Italian American dish; tortellini with truffles; and spaghetti Bambini, which combines nostalgic flavors with highquality ingredients—think buttered noodles elevated with coveted aged Parmigiano- Reggiano made from the milk of vacche rosse, the prized red cows of Parma. Through three simple ingredients, Carbone creates yet another stellar dish combining comfort food with stellar tableside service.
“It’s a nod to that simple, comforting meal we loved as kids: buttered noodles with cheese. But this is the ultimate version, inspired by the traditional fettuccine Alfredo, tossed tableside as it’s served in Rome. I use just three ingredients: grass-fed butter, beautiful dry pasta and a very special Parmesan. For me, it’s the best version of buttered noodles I’ve ever had, and I hope it brings others the same joy,” he says.

VINO will feature desserts such as fresh-fried zeppole, Nutella-chocolate mousse pie and pistachio tiramisu, as well as cannoli sundaes featuring cannoli-flavored soft-serve ice cream adorned with garnishes reminiscent of traditional cannoli, such as candied fruit and fresh-fried cannoli shell shards.
Mirroring the familiar ambiance of Major Food Group establishments, VINO features a cozy aesthetic with low ceilings and candlelit interiors. Inspired by the wine-driven beloved Italian establishments, VINO’s interior led by Bishop Design offers a moody and romantic environment to evoke a bygone era. Complete with burnished bronze accents, heavy velvet drapes, gold-accented wallpaper and custom-made leather banquettes, VINO’s attention to detail in the design, wine list and menu ushers in a new level of excellence for the Grove’s culinary scene.
“We couldn’t be more thrilled to bring VINO to this extraordinary neighborhood in the city that we call home,” says Zalaznick.
“This December, we look forward to introducing the Grove to its new favorite restaurant: an instant classic that delivers the essence of Carbone while adding new chapters to the story. 2911 Grande Ave., Coconut Grove,@majorfoodgroup,carbonevino.com/coconutgrove
