David Grutman & Pharrell on Swan & Bar Bevy

David Grutman & Pharrell on Swan & Bar Bevy

What do you get when a nightlife king and a Grammy award-winning artist team up? Swan and Bar Bevy, a dapper and fresh concept serving fine cuisine, dope drinks and tons of fun in Miami's Design District.

“Swan is hands down the most beautiful restaurant in Miami,” says David Grutman, nightlife visionary and founder of Groot Hospitality (with a portfolio that includes LIV, Story, Komodo, OTL and Planta). While no one would call him subtle, the man has a point. His newest project in the Miami Design District, Swan and Bar Bevy, a collaboration with artist-of-all-trades Pharrell Williams, is absolutely stunning. Or as Pharrell describes it: a dream.

The 13,500-square-foot Ken Fulk-designed restaurant and lounge spans two floors, and every inch of the ground level is a pastel-pink and palm frond paradise. “From the second you step foot in the restaurant, you are surrounded by amazing decor details and sick artwork. I love the vibe and I know Miami will, too,” says Grutman. Not to be missed: the sketches by fashion illustrator David Downton, known for his work with Chanel, Dior, Tiffany and portraits of celebs including Cate Blanchett, Catherine Deneuve, Iman and Linda Evangelista.

The kitchen is helmed by yet another superstar: Top Chef alum (and celeb favorite) Jean Imbert. With a global menu that relies on locally and sustainably sourced ingredients, Imbert touches on the classic flavors of his native France (Dover sole with brown butter and capers) and the tropical favorites of his newest surroundings (snapper sashimi with mango and serrano chile). “We are delivering a culinary adventure,” he says.

Upstairs at Bar Bevy, the decor is equally dramatic but so, so different. Deep jewel tones, trippy artwork and Moroccan details transport you to a land where it only feels right to order cocktails with exotic names, like the Kalahari (tequila, watermelon, chile, ginger and lime) or the Mon Chéri (cherry-infused bourbon, vanilla, angostura and chocolate bitters). There’s a DJ booth, karaoke and screening rooms—and no doubt that in the wee hours, when Pharrell and Grutman’s crew is working the room, you’ll know exactly where you are: the Magic City, home of the best nightlife on the planet. 90 NE 39th St., Design District,
