“I didn’t choose Miami; Miami chose me!” proclaims chef Massimo Bottura with his signature flair. And indeed, with the unveiling of his first solo U.S. venture, Torno Subito, Miami just got a significant sprinkle of Italian magic. Expect a menu that tells a tale with each bite. The pappa al pomodoro—a love letter to food waste combat—oozes goodness with day-old bread, tomato and Parmigiano Reggiano foam. Appetizers like the modern salad bring forth an international culinary expedition, while the I Love Tartar lets guests mix their own delicacies.

Paladini’s pasta offerings are nothing short of divine. Think Spaghetti Ai 3 pomodori and cacio e pepe—classics with a Bottura twist. Then there’s the Emilia Burger, a cheeky nod to the American classic, reconceptualized with Parmigiano Reggiano and balsamic-infused rib eye and cotechino.
The experience continues with Torno Subito’s curated wine list, spotlighting the likes of Paltrinieri Solco Lambrusco di Sorbara 2022. Cocktails, curated in collaboration with New York’s famed Dante (2019’s World’s Best Bar), meld Italian traditions with Miami’s vibrant drinking culture, translating the notion that ‘everything old is new again.’
