This spring, MILA Omakase’s signature dinner series returns with a three-night culinary collaboration with Michelin-recognized Flocons de Sel, offering a dining experience specifically curated to celebrate Earth Month.
Known for its French Alpine refinement and exacting technique, Flocons de Sel brings a new layer to MILA Omakase’s immersive counter, helmed by executive chefs Emmanuel Renaut and chef Reiji Yoshizawa. Featuring a thoughtfully crafted 12-course tasting menu, each dish reflects a shared philosophy of sustainability, intentional sourcing, and global technique.
“This collaboration is our tribute to the planet. Earth Day reminds us to live—and cook—with intention,” chef Yoshizawa says. “By bringing chef Emmanuel Renaut to MILA Omakase, we’re blending two culinary traditions that deeply honor nature. Every dish on this 12-course menu is a conversation between the French Alps and Japanese minimalism, highlighting seasonal, sustainable ingredients that speak to Earth’s richness — and our responsibility to protect it.
While the 12-course tasting menu will remain the same each night, guests can expect subtle shifts in preparation, mood and interaction, making each meal unique.
“Like nature, it evolves. The ingredients may be the same, but their energy — the emotion behind each course — will shift slightly depending on the day, the guest, and the inspiration of the kitchen,” chef Yoshizawa continues.
