Renowned chef Nando Chang unveils his latest culinary masterpiece—Itamae AO—a Peruvian Japanese oasis located in the heart of Midtown Miami. Guests are invited to indulge in an elevated omakase experience that marries Japanese precision with Peruvian zest. This exclusive 10-seat counter sets the stage for an extraordinary eight-course tasting menu, featuring an intricate interplay of dry-aged fish, sashimi and more. Meaning “blue” in Japanese, the addition of 'AO' to the restaurant's name reflects an intensified focus on oceanic treasures, while paying homage to Chang’s familial roots and their coastal heritage in Peru. Menu highlights span from an updated version of Papa Chang’s shiitake mushrooms, now reigning atop a lucuma custard, and ceviche, the star of Itamae’s legacy, returns in an impeccable sashimi rendition. Aesthetically, chef Chang’s attention to detail transforms the space, with rattan panels and a striking blue terrazzo countertop evoking a serene ocean and fostering an intimate, interactive dining experience. 3225 NE 1st Ave., Miami,@itamaeao
