Forget everything you've heard about veggie burgers. These fantastical creations are part of a new wave of meat-free eating that is deliciously sexy—and satisfying.
In Tokyo they wrap them in rice cakes. In Auckland they garnish them with a pineapple slice. And in Montreal they smother them in brown gravy. But perhaps no burger-loving city has become more inventive with their burgers than Miami. For starters, we’ve just about done away with the meat altogether. At Michael’s Genuine, the umami bomb rages with ingredients like beets, mushrooms, chickpeas and hemp seed, to name a few. The melted Gruyere mixed with the restaurant’s special sauce and sliced avocado seals the deal. The Nobl Burger at Delicious Raw Kitchen and Bar is a vegan dream: scratch-made pickles, truffle garlic Dijon, roasted portobello and Bermuda onion on a vegan brioche bun. Green Bar & Kitchen's BAD (Breakfast All Day) Burger recently won top honors at the Seed Food and Wine Festival. This no-joke Field Roast patty burger is cooked in a maple glaze, topped with scrambled eggs and Chao cheese, then topped with hash browns and tempeh bacon. Maybe a full-size burger isn’t your jam; maybe you need some bite-size meatless magic to satisfy that healthy craving. Stagionale at La Centrale is putting the “oh man!” in mangiare with its roasted cauliflower sliders that are guaranteed to have even carnivores flipping.
