An internationally acclaimed chef, Richard Sandoval, celebrates our connection to the planet this spring with a global culinary campaign that emphasizes our reliance on nature. Sandoval has designed an interactive, multi-sensory plant-based culinary experience, Viva Abejas – Long Live Bees, to highlight the importance of the world's pollinators –bees– on whom the global food cycle depends.
Guests at Toro Toro at the Intercontinental Miami will be able to sample dishes from a plant-based culinary menu that includes edible flowers, bee pollen, honey, avocado, and other bee-centric products. Richard Sandoval Hospitality has teamed with the Help Save the Bees Foundation to donate a portion of the proceeds from every Viva Abejas menu item sold to the foundation. Guests can also donate directly to Richard Sandoval's foundation.
Toro Toro will serve an exclusive a la carte menu during the month-long campaign, which includes Bee Pollen Rainbow Quinoa with avocado, green pea puree, lemongrass, Meyer lemon confit, and organic garden flowers ($20); Chilean Seabass, Farro & Coconut Risotto with acacia honey, farro-coconut milk, roasted heirloom carrots, mascarpone cheese, veggie jus, and green sprouts ($58); and
Cocktails for Viva Abejas include Mok-Chi ($18) with Patrón Reposado, spicy chamomile, ginger, honey-agave syrup, and Drambuie; and Bee-Cante ($18) with Patrón Reposado, Yellow Chartreuse, house produced red pepper and ginger syrup, and raspberry.
"The Help Save the Bees Foundation enthusiastically partners with Richard Sandoval Hospitality and their beautiful 'Viva Abejas' campaign to raise awareness of the importance of bees, in conjunction with Earth Day. We share Chef Sandoval's passion for bees and the good work they do as a critical link in our food chain," said foundation president Laurie Yarborough.
The Viva Abejas campaign will run from Tuesday, March 22, through Sunday, April 24, 2022. Reservations are strongly recommended and can be done on OpenTable.
